I've used this Classic Series 12-Inch Carbon Steel Stir Fry Pan for a few weeks now and it has become my go-to for high heat cooking. The 1.5mm carbon steel gets a great sear on vegetables and meat, and it sears much like a wok while fitting my smaller burner nicely. The birch handle is comfortable and I like that it unscrews so the pan can go in the oven. The uncoated surface needs seasoning, but it's already building a nice patina that adds flavor. Solid and built to last.
